Ten-minutes Mustard Fish
Ingredients

30ml/2 tbsp mustard powder
-
450ml/3/4 pt/2 cups water
-
2.5ml/1/2 tsp ground turmeric
-
salt
-
75ml/5 tbsp mustard oil
-
5ml/1 tsp onion seeds
-
3 onions, finely chopped
-
450g/1 lb herring
-
3 green chilies, chopped
Method:
-
Dissolve the mustard powder
in the water then stir in the turmeric and salt.
Leave to stand for at least 30 minutes.

Heat 60ml/4 tbsp of oil almost
to smoking point and fry the onion seeds for 30
seconds. Add the onions and fry until golden.

Pour in the mustard water and
bring to the boil. Add the fish, cover and simmer
for 6-7 minutes.

Add the chilies, cover and
simmer for 2 minutes. Stir in the remaining mustard
oil and serve hot with plain rice.
