Seasoning Mixture and Basic Recipes -
Curry Leaves Powder
Ingredients

1 large bunch fresh curry
leaves
-
10 ml/2 tsp coriander ( cilantro) seeds
-
15 ml/1 tbsp black peppercorns
-
15 ml/1 tbsp cumin seeds
-
10 ml/2 tsp fenugreek seeds
-
10 ml/2 tsp mustard seeds
-
15 ml tbsp split black beans
-
15 ml tbsp yellow split peas
-
5 ml/1 tsp asafoetida
-

ml/2 tbsp jaggery or sugar
-
10 ml/2 tbsp tamarind pulp

salt
Method:
-
Dry roast the curry
leaves for 2 minutes
then set aside.
Roast the coriander
seeds, peppercorns,
cumin, fenugreek and
mustard seeds, split
beans, split peas
and asafoetida until
golden.
-
Grind
everything
to a
fine
powder,
adding
the
jaggery
or
sugar,
tamarind
and salt
to
taste.
Store in
an
airtight
container
and
serve
with hot
rice and
ghee.
