Seasoning Mixture and Basic Recipes -
Dal Powder
Ingredients
-
100 g/4 oz/ cup red lentils
-
15 ml/1 tbsp yellow split peas
-
15 ml/1 tbsp split black beans
-
15 ml/1 tbsp ghee
-
5 ml/1 tsp black peppercorns
-
5 ml/1 tsp cumin seeds
-
5 dried red chilies
-
2.5
ml/1/2 tsp asafoetida
-
salt
Method:
-
Dry roast the lentils,
split peas and split
beans in a pan for 4-5
minutes over a low heat.
-
Heat the ghee
and fry the
peppercorns,
cumin seeds,
chilies and
asafoetida
powder for a few
minutes until
lightly browned.
Grind everything
to a powder,
adding salt as
required. Store
in an airtight
container and
serve with hot
rice and ghee.
