Seasoning Mixture and Basic Recipes - Fresh Green Curry Paste

Ingredients

  • 6 cloves garlic

  • 2.5 cm/1 in ginger root, chopped

  • 25 g/1 oz/1 cup fresh mint leaves

  • 25 g/1 oz/1 cup fresh coriander (cilantro)

  • 10 ml/2 tsp ground turmeric

  • 2.5 ml/1/2 tsp cloves

  • seeds from 10 cardamom pods

  • 100 ml/ 4 fl oz/1/2 cup wine vinegar

  • 5 mill tsp fenugreek seeds

  • 100 ml/4 fl oz/1/2 cup oil


Method:

  1. Puree all the ingredients except the oil In a blender or food processor. Heat the oil in a small, heavy-based pan over a medium heat.    

  2. Add the puree and fry for 5-6 minutes, stirring constantly, until the oil appears on the surface. Discard the oil and let the paste cool. Store in an airtight jar for up to 1 month.
