Seasoning Mixture and Basic Recipes - Green Curry Paste

Ingredients

  • 5 ml/1 tsp fenugreek seeds, soaked overnight

  • 5 cloves garlic, chopped

  • 30 ml/2 tbsp chopped ginger root

  • 45 ml/3 tbsp chopped fresh mint

  • 45 ml/3 tbsp chopped fresh coriander ( cilantro)

  • 120 ml/4 fl oz/1/2 cup wine vinegar

  • 15 ml/1 tbsp salt

  • 15 ml/1 tbsp ground turmeric

  • 10 ml/2 tsp chili powder

  • 2.5 ml/1/2 tsp ground cloves

  • 5 ml/1 tsp ground cardamom 

  • 120 ml/4 fl oz/1/2 cup oil

  • 45 ml/3 tbsp sesame oil


Method:

  1. Drain and rinse the fenugreek seeds then puree with all the remaining ingredients except the oils.   

  2. Heat the oils and fry the paste for about 5minutes unto thick and the oil appears on the surface. Spoon into jars. Heat a little more oil to cover the paste then seal and store to use as required.
