Spicy Hyderabad-style Curry Powder
Ingredients

20 green cardamom pods
-
2
cinnamon sticks, broken into pieces

5 bay leaves
-
2.5 ml/1/2 tsp
cloves
-
1.5 tsp/1/4 tsp grated nutmeg
-
30 ml/2 tbsp aniseeds
-
5 ml/1
tsp black peppercorns
-
5 dried red chilies
-
10 dried
curry leaves
-
90 ml/6 tbsp coriander
(cilantro) seeds
-
45 ml/3 tbsp cumin seeds
-
45 ml/3 tbsp ground turmeric
-
15 ml/l tbsp fenugreek seeds
-
30 ml/2 tbsp black mustard
seeds
Method:
-
Roast the spices in
a small, heavy based pan over a medium
heat for 4-5 minutes, stirring
constantly until they become a shade
darker than their original color.
-
The spices will also
give out a distinct aroma and the pan will
emit light fumes of smoke. Remove the spices
from the pan and grind them to a fine powder
in a spice or coffee grinder. Store in an
airtight jar for up to 6 months.
