Seasoning Mixture and Basic Recipes - Spicy Hyderabad-style Curry Powder

Ingredients

  • 20 green cardamom pods 

  • 2 cinnamon sticks, broken into pieces

  • 5 bay leaves

  • 2.5 ml/1/2 tsp cloves

  • 1.5 tsp/1/4 tsp grated nutmeg

  • 30 ml/2 tbsp aniseeds

  • 5 ml/1 tsp black peppercorns

  • 5 dried red chilies

  • 10 dried curry leaves

  • 90 ml/6 tbsp coriander (cilantro) seeds

  • 45 ml/3 tbsp cumin seeds

  • 45 ml/3 tbsp ground turmeric

  • 15 ml/l tbsp fenugreek seeds

  • 30 ml/2 tbsp black mustard seeds


Method:

  1. Roast the spices in a small, heavy based pan over a medium heat for 4-5 minutes, stirring constantly until they become a shade darker than their original color.

     

  2. The spices will also give out a distinct aroma and the pan will emit light fumes of smoke. Remove the spices from the pan and grind them to a fine powder in a spice or coffee grinder. Store in an airtight jar for up to 6 months.
