Seasoning Mixture and Basic Recipes - Tamarind Pulp

Ingredients

  • 100 gill oz dried tamarind

  • 600 mill pt/2 1/2 cups hot water


Method:

  1. Soak the dried tamarind overnight in the hot water or boil it for 15 minutes over a medium heat.

  2. Rub the tamarind through your fingers to reduce it to a pulp then rub through a sieve and collect the pulp.

  3. Discard the husks, which should not exceed 15 ml/1 tbsp. Excess pulp can be frozen.
