Cabbage Soup
Ingredients
-
50g/2 oz/1/4 cup ghee
-
1 onion, chopped
-
900g/2 lb cabbage, chopped
-
1 large potato, quartered
-
2 tomatoes, halved
-
600ml/1 pt /2 1/2 cups water
-
300ml/ 1/2 pt/ 1 1/4 cups
vegetable stock
-
5ml/1 tsp corn flour
(cornstarch)

salt and pepper
Method:

Heat the ghee in
a pan and fry the union until soft. Add the cabbage
and stir until wilted and coated with ghee.

Add the potato,
tomatoes and water, bring to the boil, cover and
cook over a medium heat for about 10 minutes. Add
the stock, return to the boil and cook for 5
minutes.

Remove from the
heat and mash or puree the soup. Blend the corn
flour with a little of the soup then stir it into
the pan and bring to the boil, stirring, until
slightly thickened.

Season to taste
with slat and pepper and serve hot.
