Soups Recipes - Cauliflower Soup

Ingredients

  • 1 cauliflower, cut into florets

  • 1 bay leaf

  • 2.5 ml/1/2 tsp salt

  • 25g/1 oz/2 tbsp butter or margarine

  • 1 onion, finely chopped

  • 1 potato, sliced

  • 25 g/1 oz/1/4 cup plain (all-purpose) flour

  • 900ml/1 1/2 pts/3 cups milk

  • salt and pepper


Method:

  1. Put the cauliflower, bay leaf and salt into a pan and add just enough water to cover. Bring to the boil, cover and c ok for 7 minutes. Drain, reserving the liquid.

  2. Meanwhile, melt the butter or margarine and fry the onion and potato for 5 minutes until soft but not browned. Blend in the flour and cook, stirring continuously for 2 minutes.

  3. Blend in the milk and bring to the boll, stirring. Add the cauliflower, reduce the heat and simmer gently until tender.

  4.  Puree in a blender or food processor then return to the pan and stir in enough of the reserved liquid to obtain the consistency you prefer. Check and adjust the seasoning to taste and reheat before serving.
