Soups Recipes - Corn Soup

Ingredients

  • 25 g/1 oz/2 tbsp butter or margarine

  • 1 small onion, chopped

  • 1 clove garlic, crushed

  • 1 green chili, chopped

  • 10 ml/2 tsp chopped fresh coriander (cilantro)

  • 2 tomatoes, skinned and chopped

  • 450 g/1 lb sweet corn kernels

  • 900 ml/1/2 pts/3 3/4 cups stock

  • salt and pepper

  • 45 ml/3 tbsp cream or milk


Method:

  1. Melt the butter or margarine in a large pan and fry the onion, garlic and chili until soft but not browned. Add the coriander and tomatoes and fry until the tomatoes are soft and the fat separates.

  2. Add half the com and fry for a few minutes. Add half the stock and puree until smooth in a blender or food processor.

  3. Add the remaining stock and corn, season with salt and pepper, bring to the boil and simmer for 20 minutes. Stir in the cream or milk and heat through gently before serving.
