Soups Recipes - Creamy Lettuce Soup

Ingredients

  • 25g/1 oz/2 tbsp unsalted butter

  • 2 small lettuces, torn into bite-sized pieces

  • 1 small onion, finely chopped

  • 25g/1 oz/1/4 cup plain flour

  • 900ml/1 1/2 pts/3 3/4 cups milk

  • salt and pepper

  • 1 3gg yolk

  • 60ml/4 tbsp cream

  • 30ml/2 tbsp grated cheese


Method:

  1. Melt the butter in a large pan, add the lettuce and onion and fry gently for 8-9 minutes. Stir in the flour and cook for 2 minutes, stirring.

  2. Gradually whisk in the milk until well blended. Bring to the boil , cover and simmer gently for 15-20 minutes. Remove from the heat and leave to cool.

  3. Puree the soup and season to taste with salt and pepper. Gradually reheat the soup but do not let it boil. Blend together the egg yolk, cram and cheese.

  4. Stir a little of the hot soup into the mixture, then stir it back into the pan and blend together over a low heat. Cook until slightly thickened. Leave to cool the chill before serving.
