Soups Recipes - Lentil Soup

Ingredients

  • 15ml/1 tbsp ghee

  • 100g/4 oz/2/3 cup red lentils, soaked for 3 hours

  • 2 onions, chopped

  • 1/2 carrot, chopped

  • 1 potato, chopped

  • 1/2 turnip, chopped

  • 600ml/1 pt/2 1/2 cups vegetable stock

  • salt and pepper

  • 150ml/1/4 pt/2/3 cup milk

  • 15ml/1 tbsp plain flour

  • fried bread croutons


Method:

  1. Heat the ghee in a large pan and fry the lentils and vegetable until the vegetables are soft but not browned.

  2. Add the water, salt and pepper, bring to the boil and simmer gently for 30-40 minutes until the lentils and vegetables are tender.

  3. Puree the soup in a blender or food processor then return to the pan and simmer for 3 minutes. Blend together the milk and flour, stir into the soup and simmer, stirring occasionally, for 5 minutes.

  4. Serve hot with crispy fried bread croutons.
