Soups Recipes - Mixed Vegetable Soup

Ingredients

  • 450g/1 lb mixed vegetables, cut into chunks

  • 900ml/1 1/2 pts/3 23 cups water

  • few drops of almond essence (extract)

  • salt and pepper

  • oil for frying

  • 2 slices of brown bread, diced


Method:

  1. Place the vegetables and water in a heavy based pan and bring to the boil. Cover and simmer gently until the vegetables are tender and mushy.

  2. Puree the soup in a blender or food processor the return to the pan, add the almond essence and season to taste with salt and pepper.

  3. Simmer until the soup is the consistency you prefer. Just before serving, heat the oil in a separate [an and fry the bread until crispy.

  4. Sprinkle over the soup and serve hot.
