Soups Recipes - Mushroom Soup

Ingredients

  • 25g/1 oz/2 tbsp butter or margarine

  • 3 spring onions, chopped

  • 100g/4 oz mushrooms, chopped

  • 25g/1 oz/1/4 cup plain flour

  • 45ml/3/4 pt/2 cups stock

  • 120ml/4 fl oz/1/2 cup milk

  • slat and pepper


Method:

  1. Melt the butter in a large pan and fry the spring onions until soft but not browned.

  2. Add the mushrooms and fry for 5 minutes. Stir in the flour and cook for 2 minutes. Gradually and add the stock, stirring until the soup thickness.

  3. Cover and simmer gently for 10 minutes. Add the milk and season with salt and pepper.

  4. Heat through gently before serving.
