Pea Soup
Ingredients
-
450g/1 lb peas
-
900ml/1 1/2 pts/3 3/4 cups
chicken or vegetable stock
-
5ml/1 tsp chopped fresh mint
-
2.5ml/1/2 tsp sugar
-
25g/1 oz/s tbsp unsalted butter
-
25g/1 oz/1/4 cup plain flour
-
300ml/1/2 pt/1 1/4 cups milk

salt and pepper
Method:

Put the peas,
stock, mint and sugar into a large pan,
bring to the boil, cover and simmer
gently for 25-30 minutes.

Meanwhile, melt the butter,
stir in the flour and cook for 2 minutes. Gradually
blend the milk, bring to the boil then reduce the
heat, season with salt and pepper and simmer gently
for 5 minutes.

Puree the pea mixture in a
blender or food processor then stir it into the
milk. Check and adjust the seasoning to taste before
serving.
