Potato Soup
Ingredients
-
15ml/1 tbsp ghee
-
2.5ml/1/2 tsp cumin seeds
-
pinch of asafetida
-
potatoes, diced
-
1 tomato, quartered
-
salt and pepper
-
600ml/1 pt/ 2 1/2 cups water
-
300ml/1/2 pt/1 1/4 cups milk
Method:

Heat the ghee and
fry the cumin seeds and asafetida until
the seeds start crackling.

Add the potatoes and tomato,
season with salt and pepper and cook for 2-3
minutes. Add the water, bring to the boil and simmer
over a medium heat for about 20 minutes.

Puree the soup in a blender or
food processor or rub through a sieve. Stir in the
milk return to the boil and simmer for 2 minutes
before serving.
