Soups Recipes - Potato Soup

Ingredients

  • 15ml/1 tbsp ghee

  • 2.5ml/1/2 tsp cumin seeds

  • pinch of asafetida

  • potatoes, diced

  • 1 tomato, quartered

  • salt and pepper

  • 600ml/1 pt/ 2 1/2 cups water

  • 300ml/1/2 pt/1 1/4 cups milk


Method:

  1. Heat the ghee and fry the cumin seeds and asafetida until the seeds start crackling.

  2. Add the potatoes and tomato, season with salt and pepper and cook for 2-3 minutes. Add the water, bring to the boil and simmer over a medium heat for about 20 minutes.

  3. Puree the soup in a blender or food processor or rub through a sieve. Stir in the milk return to the boil and simmer for 2 minutes before serving.
