Prawn and Celery Soup
Ingredients

15ml/1 tbsp oil
-
15ml/1 tbsp ghee
-
1 onion, sliced
-
5cm/2 in ginger root, sliced
-
1 green chili, sliced
-
2.25l/4 pts/10 cups water from
cooked rice
-
4 sticks celery, cut into
chunks
-
225g/8 oz cooked, peeled prawns
(shrimp)
-
5ml/1 tsp sugar
-
2.5ml/1/2 tsp ground turmeric
-
salt
-
1 lemon, sliced
Method:
-
Heat the oil and
ghee in a large pan and fry the onion,
ginger and chili until soft but not
browned.
-
Add the price water and simmer
for 10-15 minutes until the celery is tender. Add
the prawns and simmer until they are just heated
through.
-
Season with turmeric, sugar and
salt and serve with rice and slices of lemon.
