Soups Recipes - Prawn and Celery Soup

Ingredients

  • 15ml/1 tbsp oil

  • 15ml/1 tbsp ghee

  • 1 onion, sliced

  • 5cm/2 in ginger root, sliced

  • 1 green chili, sliced

  • 2.25l/4 pts/10 cups water from cooked rice

  • 4 sticks celery, cut into chunks

  • 225g/8 oz cooked, peeled prawns (shrimp)

  • 5ml/1 tsp sugar

  • 2.5ml/1/2 tsp ground turmeric

  • salt

  • 1 lemon, sliced


Method:

  1. Heat the oil and ghee in a large pan and fry the onion, ginger and chili until soft but not browned.

  2. Add the price water and simmer for 10-15 minutes until the celery is tender. Add the prawns and simmer until they are just heated through.

  3. Season with turmeric, sugar and salt and serve with rice and slices of lemon.
