Pumpkin Soup
Ingredients

45ml/3 tbsp oil
-
2 onions, chopped
-
2 bay leaves
-
1cm/1/2 in ginger root
-
2 cloves garlic
-
1 green chili
-
450g/1 lb pumpkin, diced
-
1 tomato, skinned and chopped
-
15ml/1 tbsp chopped fresh
coriander
-
750ml/1 1/4 pts/3 cups stock
-
45ml/3 tbsp single (light)
cream
-
5ml/1 tsp lemon juice
-
salt
Method:
-
Heat the oil and
fry the onions and bay leaves until
soft. Puree the ginger, garlic and chili
then add it to the pan and fry for 1
minute.

Add the pumpkin and fry for 2-3
minutes, Add the tomato, coriander and stock, bring
to the boil then simmer for 30 minutes.

Puree in a blender and thin
with a little more stock, if necessary. Reheat
gently, stir in the cream, lemon juice and slat to
taste and serve.
