Soups Recipes - Pumpkin Soup

Ingredients

  • 45ml/3 tbsp oil

  • 2 onions, chopped

  • 2 bay leaves

  • 1cm/1/2 in ginger root

  • 2 cloves garlic

  • 1 green chili

  • 450g/1 lb pumpkin, diced

  • 1 tomato, skinned and chopped

  • 15ml/1 tbsp chopped fresh coriander

  • 750ml/1 1/4 pts/3 cups stock

  • 45ml/3 tbsp single (light) cream

  • 5ml/1 tsp lemon juice

  • salt


Method:

  1. Heat the oil and fry the onions and bay leaves until soft. Puree the ginger, garlic and chili then add it to the pan and fry for 1 minute.

  2. Add the pumpkin and fry for 2-3 minutes, Add the tomato, coriander and stock, bring to the boil then simmer for 30 minutes.

  3. Puree in a blender and thin with a little more stock, if necessary. Reheat gently, stir in the cream, lemon juice and slat to taste and serve.
