Soups Recipes - Spinach Soup

Ingredients

  • 225g/8 oz/1/2 lb fresh spinach, chopped

  • 900ml/1 1/2 pts/3 cups water

  • salt

  • 30ml/2 tbsp ghee

  • 1 onion, chopped

  • pepper

  • 30ml/2 tbsp cream


Method:

  1. Place the spinach, water and salt in a large pan, bring to the boil and simmer until the spinach is soft.

  2. Puree  until smooth in a blender or food processor or rub through a sieve. In a separate pan, heat the ghee and fry the onion until golden. 

  3. Gradually blend in the spinach puree and simmer for 5 minutes. stirring occasionally.

  4. Season with pepper and serve hot, topped with cream.
