Soups Recipes - Tangy Tomato Soup

Ingredients

  • 450 g/1 lb tomatoes, skinned and quartered

  • 1 small onion, sliced

  • 1 small green (bell) pepper, quartered

  • 5 ml/1 tsp chopped fresh dill (dill weed)

  • juice of 1/2 lime

  • 450 ml/3/4 pt/2 cups chicken or vegetable stock

  • salt and pepper


Method:

  1. Puree al the ingredients until smooth in a blender or food processor.

  2. Check and adjust the seasoning to taste. Chill well then serve sprinkled with black pepper.
