Soups Recipes - Tomato and Coconut Soup

Ingredients

  • 30ml/2 tbsp oil

  • 1 onion, chopped

  • 2 bay leaves

  • 30ml/2 tbsp plain flour

  • 450g/1 lb tomatoes, chopped

  • 100g/4 oz desiccated (shredded) coconut

  • 2 green chilies

  • 2.5ml/1 in ginger root

  • 500ml/17 fl oz/2 1/4 cups water

  • salt

  • 45ml/3 tbsp coconut milk

  • 15ml/1 tbsp chopped fresh coriander


Method:

  1. Heat the oil and fry the onion and bay leaves until soft. Add the flour and fry for 2 minutes, stirring. Add the tomatoes and coconut and fry for 3 minutes.

  2. Puree the chilies and ginger then add to the pan with the water and salt. Bring to the boil then simmer for about 12 minutes.

  3. Puree or rub through a sieve then and the coconut milk and boil for a few minutes until the soup is consistency you prefer.

  4. Garnish with the coriander before serving.
