Tomato and Coconut Soup
Ingredients

30ml/2 tbsp oil
-
1 onion, chopped
-
2 bay leaves
-
30ml/2 tbsp plain flour
-
450g/1 lb tomatoes, chopped
-
100g/4 oz desiccated (shredded)
coconut
-
2 green chilies
-
2.5ml/1 in ginger root
-
500ml/17 fl oz/2 1/4 cups water
-
salt
-
45ml/3 tbsp coconut milk
-
15ml/1 tbsp chopped fresh
coriander
Method:
-
Heat the oil and
fry the onion and bay leaves until soft.
Add the flour and fry for 2 minutes,
stirring. Add the tomatoes and coconut
and fry for 3 minutes.

Puree the chilies and ginger
then add to the pan with the water and salt. Bring
to the boil then simmer for about 12 minutes.

Puree or rub through a sieve
then and the coconut milk and boil for a few minutes
until the soup is consistency you prefer.

Garnish with the coriander
before serving.
