Soups Recipes - Yoghurt Soup

Ingredients

  • 2 green chilies

  • 1 onion, chopped

  • 1 cm/1/2 in ginger root

  • 4 cloves garlic

  • 30ml/2 tbsp ghee

  • 5ml/1 tsp cumin seeds

  • 5ml/1 tsp mustard seeds

  • 2-3 curry leaves

  • 2.5ml/1/2 tsp ground turmeric

  • 300ml/1/2 pt/1 1/4 cups natural (plain) yoghurt

  • 300ml/1/2 pt/1 1/4 cups single (light) cream

  • 10ml/2 tsp sugar

  • salt

  • 15ml/1 tbsp chopped fresh coriander


Method:

  1. Puree the chilies, onion, ginger rand garlic. Heat the ghee and fry the cumin and mustard seeds and curry leaves until the seeds start crackling.

  2. Add the turmeric and puree and fry until browned. Add the yoghurt and cream and season to taste with sugar and salt.

  3. Whisk over a gentle heat until the soup comes to the boil. Serve garnished with fresh coriander.
