Chutneys, Pickles and Relishes Recipes - Banana Chutney

Ingredients

  • 500g/18 oz bananas, peeled and sliced

  • 50g/ 2 oz raisins

  • 50g/2 oz stones dates, chopped

  • 225g/8 oz cooking apples, peeled, cored and chopped

  • 2.5ml/1/2 tsp salt

  • 75g/3 oz demerara sugar

  • 10ml/2 tsp ground ginger

  • pinch of cayenne

  • 150ml/1/4 pt distilled vinegar


Method:

  1. Place all the ingredients in a large pan and stir over a low heat until the sugar has dissolved.

  2. Bring to the boil then simmer gently, stirring occasionally, for about 45 minutes until the chutney is thick and pulpy.

  3. Spoon into warmed jars, cover and store for 2-3 months before serving.
