Chutneys, Pickles and Relishes Recipes - Carrot Chutney

Ingredients

  • 450g/1 lb carrots, grated

  • 1 onion, grated

  • 45ml/3 tbsp chopped fresh mint

  • 2.5cm/1 in ginger root, finely chopped

  • 7.5ml/1 1/2 tsp salt

  • 60ml/4 tbsp lemon juice


Method:

  1. Mix together all the ingredients, adding just enough lemon juice to moisture. Cover and chill until required.

  2. The chutney will keep for up to 2 days in the refrigerator.
