- Carrot Chutney
Ingredients

450g/1 lb carrots, grated
-
1 onion, grated
-
45ml/3 tbsp chopped fresh mint
-
2.5cm/1 in ginger root, finely
chopped

7.5ml/1 1/2 tsp salt
-
60ml/4 tbsp lemon juice
Method:

Mix together all the
ingredients, adding just enough lemon juice to
moisture. Cover and chill until required.

The
chutney will keep for up to 2 days in the
refrigerator.
