Chutneys, Pickles and Relishes Recipes - Cauliflower Pickle

Ingredients

  • 900g/2 lb cauliflower, cut into florets

  • salt

  • 15ml/1 tbsp mustard seeds

  • 50g/2 oz mango powder

  • 15ml/1 tbsp chili powder

  • 10ml/2 tsp ground turmeric

  • 5ml/1 tsp aniseeds

  • 90ml/6 tbsp mustard oil


Method:

  1. Cook the cauliflower in boiling salted water until just tender. Drain and leave to cool. Grind together the spices and mustard oil to a paste.

  2. Toss the cooked cauliflower in the paste and leave to marinate for 1 day in a warm place. Store in airtight jars.
