- Cauliflower Pickle
Ingredients

900g/2 lb cauliflower, cut into
florets
-
salt
-
15ml/1 tbsp mustard seeds
-
50g/2 oz mango powder
-
15ml/1 tbsp chili powder
-
10ml/2 tsp ground turmeric
-
5ml/1 tsp aniseeds
-
90ml/6 tbsp mustard oil
Method:

Cook the cauliflower in boiling
salted water until just tender. Drain and leave to
cool. Grind together the spices and mustard oil to a
paste.

Toss the cooked cauliflower in the paste and
leave to marinate for 1 day in a warm place. Store
in airtight jars.
