Chutneys, Pickles and Relishes Recipes - Date and Orange Chutney

Ingredients

  • 225g/1 lb oranges

  • 350g/12 oz dates, stoned

  • 225g/8 oz onions, chopped

  • 100g/4 oz raisins

  • 350g/12 oz granulated sugar

  • 15ml/1 tsp salt

  • pinch of cayenne

  • 750ml/1 1/4 pts malt vinegar


Method:

  1. Finely grate the orange rind, remove and discard the pith and pips and slice the oranges. Put the orange rind and flesh in a large pan with all the remaining ingredients.

  2. Stir over a gentle heat until the sugar has dissolved then bring to the boil and simmer gently, stirring occasionally, for about 45 minutes until thick. Spoon into warmed jars, seal and store for 2-3 months before eating.
