Ingredients
225g/1 lb oranges
350g/12 oz dates, stoned
225g/8 oz onions, chopped
100g/4 oz raisins
350g/12 oz granulated sugar
15ml/1 tsp salt
pinch of cayenne
750ml/1 1/4 pts malt vinegar
Method:
Finely grate the orange rind,
remove and discard the pith and pips and slice the
oranges. Put the orange rind and flesh in a large
pan with all the remaining ingredients.
Stir over a
gentle heat until the sugar has dissolved then bring
to the boil and simmer gently, stirring
occasionally, for about 45 minutes until thick.
Spoon into warmed jars, seal and store for 2-3
months before eating.
