Chutneys, Pickles and Relishes Recipes - Fish Roe Pickle

Ingredients

  • 450g/1 lb fresh roe

  • 60ml/4 tbsp chili powder

  • 30ml2 tbsp salt

  • 300ml/1/2 pt ground nut (peanut) oil

  • 450ml/3/4 pt wine vinegar

  • 45ml/3 tbsp mustard seeds, ground


Method:

  1. Clean the fish roes and sprinkle with 15ml/1 tbsp of chili powder, 10ml/2 tsp of turmeric and the salt. Mix well then leave to stand for 30 minutes.

  2. Heat the oil and fry the roes well on both sides. Leave to cool then cut into 2.5cm/1 in pieces and pack in layers in a pickling jar.

  3. Mix the remaining spices with the wine vinegar then pour over the roes. Seal tightly and shake the jar well. Leave to stand for 1 week before using.
