Fruity Tamarind Chutney
Ingredients

100g/4 oz dry tamarind
-
300ml/1/2 pt water
-
225g/8oz sugar
-
5ml/1 tsp garam masala
-
5ml/1 tsp ground roasted cumin
-
2.5ml/1/2 tsp ground red chili
-
salt
-
100g/4 oz apples, peeled and
chopped
-
150g/5 oz peach, peeled and
chopped

2 bananas, sliced
Method:

Soak the tamarind overnight in
the water or boil it for 15 minutes over a
medium-low heat.

Sieve the pulp and discard the
seeds and sticks; the waste should not exceed 15ml/1
tbsp. Place the pulp, sugar and spices in a pan over
a high heat, bring to the boil then simmer gently
for 10 minutes.

Add the apple and peach and cook for
a further 2-3 minutes. Add the banana and cook for 1
minute. Leave to cool then spoon into airtight jars.
