Ginger and Green Chili Pickle
Ingredients
100g/4 oz ginger root
50g/2 oz green chilies
175ml/6 fl oz lemon juice
10ml/2 tsp salt
5ml/1 tsp garam masala
5ml/1 tsp ground red chili
Method:
Cut the peeled ginger into
strips 1.5cm/1/2 in long and 5mm/1/8 in thick. Place
in a jar with the remaining ingredients, making sure
there is enough lemon juice to cover the ginger and
chili.
Put the lid on the jar and
shake it twice daily foe about a moth until the
pickle is ready. The pickle will mature quickly if
the jar is left in the sun, but open the lid
slightly to avoid condensation.
