Gooseberry Pickle
Ingredients

2.5ml/1/2 tsp asafoetida
-
5ml/1 tsp fenugreek seeds
-
120ml/4 fl oz gingelly oil
-
2.5ml/1/2 tsp ground turmeric
-
20ml/4 tsp chili powder
-
10ml/2 tsp mustard seeds
-
100g/4 oz gooseberries, chopped

30ml/2 tbsp salt
Method:
-
Dry roast the asafoetida and
fenugreek seeds until lightly colored. Heat
the oil and fry the mustard seeds, turmeric and
chili powder until the seeds start crackling.

Add
the gooseberries, salt and roasted spices and simmer
for a few minutes, stirring, until well blended.
Leave to cool.
