Chutneys, Pickles and Relishes Recipes - Green Chili Pickle

Ingredients

  • 225g/8 oz chilies, halved and seeded

  • 300ml/1/2 pt oil

  • 15ml/1 tbsp paprika

  • 5ml/1 tsp ground turmeric

  • 15ml/1 tbsp fennel seeds

  • 15ml/1 tbsp mustard seeds

  • 30ml/2 tbsp salt


Method:

  1. Place the chilies in a dry jar. Warm the oil slightly then stir in the remaining ingredients and leave to cool for 10 minutes. Pour over the chilies and mix well.

  2. Cover with muslin (cheese-cloth) and leave to stand for2-3 days in a warm place, stirring occasionally. Remove the muslin and put on the lid. Leave in a cool place for 2 weeks before serving.
