Green Chili Pickle
Ingredients
225g/8 oz chilies, halved and
seeded
300ml/1/2 pt oil
15ml/1 tbsp paprika
5ml/1 tsp ground turmeric
15ml/1 tbsp fennel seeds
15ml/1 tbsp mustard seeds
30ml/2 tbsp salt
Method:
Place the chilies in a dry jar.
Warm the oil slightly then stir in the remaining
ingredients and leave to cool for 10 minutes. Pour
over the chilies and mix well.
Cover with muslin
(cheese-cloth) and leave to stand for2-3 days in a
warm place, stirring occasionally. Remove the muslin
and put on the lid. Leave in a cool place for 2
weeks before serving.
