Chutneys, Pickles and Relishes Recipes - Hot Garlic Pickle

Ingredients

  • 1.75kg/2 lb garlic

  • 225g/8 oz salt

  • 10ml/2 tsp ground turmeric

  • 5ml/1 tsp mustard seeds

  • 5ml/1 tsp fenugreek seeds

  • 5ml/1 tsp aniseeds

  • 5ml/1 tsp nigella seeds

  • 5ml/1 tsp cumin seeds

  • 225g/8 oz mango powder

  • 100g/4 oz chili powder

  • mustard oil


Method:

  1. Soak the garlic in water for 15 minutes then rub off the skins. Dry thoroughly then pound lightly to mash but not pulp. Mix the garlic with the salt and turmeric and leave to marinate in a warm place for 1 day.

  2. Roast all the seeds lightly in a heavy-based pan then grind coarsely. Add the garlic with the mango and chili powders then spoon the mixture into a large jar.

  3. Add just enough oil to cover all the ingredients. Cover with muslin and leave for 6 days in a warm place. Transfer to smaller airtight jars for storing.
