Hot Garlic Pickle
Ingredients
1.75kg/2 lb garlic
225g/8 oz salt
10ml/2 tsp ground turmeric
5ml/1 tsp mustard seeds
5ml/1 tsp fenugreek seeds
5ml/1 tsp aniseeds
5ml/1 tsp nigella seeds
5ml/1 tsp cumin seeds
225g/8 oz mango powder
100g/4 oz chili powder
mustard oil
Method:
Soak the garlic in water for 15
minutes then rub off the skins. Dry thoroughly then
pound lightly to mash but not pulp. Mix the garlic
with the salt and turmeric and leave to marinate in
a warm place for 1 day.
Roast all the seeds lightly in
a heavy-based pan then grind coarsely. Add the
garlic with the mango and chili powders then spoon
the mixture into a large jar.
Add just enough oil to
cover all the ingredients. Cover with muslin and
leave for 6 days in a warm place. Transfer to
smaller airtight jars for storing.
