Chutneys, Pickles and Relishes Recipes - Hot Indian Chutney

Ingredients

  • 350g/12 oz cooking apples, peeled, cored and sliced

  • 225g/8 oz onions, finely chopped

  • 350g/12 oz brown sugar

  • 750ml/1 1/4 pts malt vinegar

  • 225g/8 oz raisins

  • 2 cloves garlic, crushed

  • 10ml/2 tsp salt

  • 15ml/1 tbsp ground ginger

  • 15ml/1 tbsp mustard seeds

  • 15ml/1 tbsp paprika

  • 10ml/2 tbsp coriander (cilantro) seeds, crushed


Method:

  1. Place all the ingredients in a large pan and stir over a gentle heat until the sugar has dissolved.

  2. Bring to the boil then simmer gently for about 2 hours until the chutney is thick. Spoon into warmed jars, cover and store for 2-3 months before serving.
