Lemon and Date Chutney
Ingredients
24 large lemons
100g/4 oz salt
675g/1 1/2 lb jaggery
12 cloves garlic
45ml/3 tbsp cumin seeds
350g/12 oz dates, shredded
600ml/1 pt wine vinegar
Method:
Quarter the lemons, sprinkle
with salt and place in a large pickling jar. Cover
tightly and leave to stand for 3 days. Spread the
pieces in a warm place for 5 days.
Mince the lemons. Grind
together the jaggery, garlic and cumin seeds. Mix
together all the ingredients to form a thick syrup
with a consistency like custard, using a little more
or less wine vinegar if necessary. Pour into
airtight jars and store for 2 weeks before use.
