Chutneys, Pickles and Relishes Recipes - Lemon Pickle

Ingredients

  • 900g/2 lb soft-skinned lemons

  • 75g/3 oz salt

  • 10ml/2 tsp ground ginger

  • 10ml/2 tsp ground red chili

  • 20ml/2 tsp ground roasted cumin

  • 10ml/2 tsp tymol seeds

  • 5ml/1 tsp black pepper

  • pinch of asafoetida


Method:

  1. Cut half the lemons into eighths and squeeze the juice from the remainder. Place the lemon pieces in a jar then add the remaining ingredients, making sure all the lemon pieces are covered with juice. Put the lid on the jar and shake it well to mix the spices but do not stir.

  2. Shake the jar twice daily for about a moth until the pickle is ready. The pickle will mature quicker if the jar is left in the sun, but open the lid slightly to avoid condensation.
