Chutneys, Pickles and Relishes Recipes - Lime Pickle

Ingredients

  • 900g/2 lb limes, quartered

  • 100g/4 oz salt

  • 900ml/1 1/2 pt water

  • 900g/2 lb sugar

  • 30ml/2 tbsp black pepper


Method:

  1. Rub the limes with salt and leave to stand for 30 minutes. Put the limes into a pan with the remaining ingredients and stir over a low heat until the sugar has dissolved.

  2. The whole mixture will be quite watery. Boil rapidly until setting point is reached. A spoonful of the pickled dropped on to a cool saucer will wrinkle when pressed. Store in airtight jars.
