Lime Pickle
Ingredients
900g/2 lb limes, quartered
100g/4 oz salt
900ml/1 1/2 pt water
900g/2 lb sugar
30ml/2 tbsp black pepper
Method:
Rub the limes with salt and
leave to stand for 30 minutes. Put the limes into a
pan with the remaining ingredients and stir over a
low heat until the sugar has dissolved.
The whole
mixture will be quite watery. Boil rapidly until
setting point is reached. A spoonful of the pickled
dropped on to a cool saucer will wrinkle when
pressed. Store in airtight jars.
