Ingredients
4 green mangoes
15ml/1 tbsp mustard oil
2 dried re chilies, seeded and
crushed
5ml/1 tsp mustard seeds
15g/1 oz sugar
1.5ml/1/4 tsp salt
900ml/1 1/2 pts water
Method:
Peel the mangoes and cut the
flesh into thin strips. Heat the oil and fry the
chilies for a few seconds. Add the mustard seeds and
fry until they start crackling. Add the mango and
fry for 5 minutes.
Add the sugar and salt and
cook, stirring, until brown. Add the water and bring
to the boil then simmer for a few minutes. Check and
adjust the taste. Leave to cool then chill well
before serving.
