Chutneys, Pickles and Relishes Recipes - Mango and Redcurrant Chutney

Ingredients

  • 900g/2 lb green mangoes

  • 450g/1 lb redcurrants

  • 225g/8 oz ginger root

  • 1.75kg/4 lb sugar

  • 450ml/3/4 pt vinegar

  • 45ml/2 tbsp chili powder

  • 15ml/1 tbsp salt


Method:

  1. Peel and slice the mangoes. Grind half the redcurrants and ginger together. Thinly slice the remaining ginger. Put all the ingredients except the mangoes in a pan and simmer, stirring, for 15 minutes.

  2. Add the mangoes and simmer until the mixture has a jam-like consistency and the mangoes are tender. Leave to cool. Store in airtight jars.
