Spicy Lemon Pickle
Ingredients

150ml/1/4 pt water
-
100g/4 oz jaggery
-
10ml/2 tsp salt
-
1.5ml/1/2 tsp coriander
(cilantro) seeds
-
2.5ml/1/2 tsp garam masala
-
5ml/1 tsp fennel seeds
-
2.5ml/1/2 tsp nigella seeds

15 lemons, quartered
Method:
-
Put all the ingredients except
the lemons into a pan and cook over a medium heat
for 10 minutes. Place the lemon quarters into a
glass jar and spoon in the cooked mixture.

Shake the
jar thoroughly and leave in a warm place for about 1
week until the lemon skins is tender, shaking at
least once a day and before each use.
