Chutneys, Pickles and Relishes Recipes - Spicy Lemon Pickle

Ingredients

  • 150ml/1/4 pt water

  • 100g/4 oz jaggery

  • 10ml/2 tsp salt

  • 1.5ml/1/2 tsp coriander (cilantro) seeds

  • 2.5ml/1/2 tsp garam masala

  • 5ml/1 tsp fennel seeds

  • 2.5ml/1/2 tsp nigella seeds

  • 15 lemons, quartered


Method:

  1. Put all the ingredients except the lemons into a pan and cook over a medium heat for 10 minutes. Place the lemon quarters into a glass jar and spoon in the cooked mixture.

  2. Shake the jar thoroughly and leave in a warm place for about 1 week until the lemon skins is tender, shaking at least once a day and before each use.
