- Sweet Mango Chutney
Ingredients

6 green mangoes
-
250ml/8 fl oz cider vinegar

225g/8 oz light brown sugar

10 cloves garlic, sliced
-
2.5cm/1 in ginger root, thinly
sliced

5ml/1 tsp ground red chili

salt
Method:
-
Peel and slice the mangoes.
Place all the ingredients in a pan and bring to the
boil.

Reduce the heat and simmer gently for 30-40
minutes, stirring occasionally, until thick. Leave
to cool. Store in airtight jars.
