Chutneys, Pickles and Relishes Recipes - Sweet Mango Chutney

Ingredients

  • 6 green mangoes

  • 250ml/8 fl oz cider vinegar

  • 225g/8 oz light brown sugar

  • 10 cloves garlic, sliced

  • 2.5cm/1 in ginger root, thinly sliced

  • 5ml/1 tsp ground red chili

  • salt


Method:

  1. Peel and slice the mangoes. Place all the ingredients in a pan and bring to the boil.

  2. Reduce the heat and simmer gently for 30-40 minutes, stirring occasionally, until thick. Leave to cool. Store in airtight jars.
