Tomato Chutney
Ingredients

75g/3 oz ginger root, coarsely
chopped
-
50g/2 oz cloves garlic, chopped
-
300ml/1/2 pt vinegar
-
800g/1 lb canned tomatoes
-
300g/11 oz sugar
-
5ml/1 tsp garam masala
-
5ml/1 tsp ground red chili
-
5ml/1 tsp salt
-
1.5ml/1/4 tsp ground mace
-
1.5ml/1/4 tsp grated nutmeg

100g/4 oz raisins
Method:

Blend the ginger and garlic to
a smooth paste with a little of the vinegar in a
blender or food processor.

Place in a pan with all
the remaining ingredients except the raisins, bring
to the boil then cook, uncovered, for 40 minutes,
stirring occasionally.

Add the raisin and cook over
a low heat for 10 minutes until thick. Leave to cool
then spoon into airtight jars.
