Chutneys, Pickles and Relishes Recipes - Tomato Chutney

Ingredients

  • 75g/3 oz ginger root, coarsely chopped

  • 50g/2 oz cloves garlic, chopped

  • 300ml/1/2 pt vinegar

  • 800g/1 lb canned tomatoes

  • 300g/11 oz sugar

  • 5ml/1 tsp garam masala

  • 5ml/1 tsp ground red chili

  • 5ml/1 tsp salt

  • 1.5ml/1/4 tsp ground mace

  • 1.5ml/1/4 tsp grated nutmeg

  • 100g/4 oz raisins


Method:

  1. Blend the ginger and garlic to a smooth paste with a little of the vinegar in a blender or food processor.

  2. Place in a pan with all the remaining ingredients except the raisins, bring to the boil then cook, uncovered, for 40 minutes, stirring occasionally.

  3. Add the raisin and cook over a low heat for 10 minutes until thick. Leave to cool then spoon into airtight jars.
