Chutneys, Pickles and Relishes Recipes - Tomato and Onion Chutney

Ingredients

  • 15ml/1 tbsp mustard seeds

  • 900g/2 lb tomatoes, skinned and chopped

  • 450g/1 lb onions, chopped

  • 2 cloves garlic, chopped

  • 900g/2 lb cooking apples, peeled, cored and sliced

  • 225g/8 oz raisins

  • 350g/12 oz granulated sugar

  • 30ml/2 tbsp curry powder

  • 5ml/1 tsp cayenne

  • 20ml/4 tsp salt

  • 900ml/1 1/2 pts vinegar


Method:

  1. Tie the mustard seeds in a piece of muslin and tie on the handle of a preserving pan.

  2. Place all the ingredients in the pan and heat gently until the sugar has dissolved, stirring, Bring to the boil then simmer gently for about 3 hours until very thick.

  3. Discard the mustard seeds and spoon the chutney into airtight jars. Store for 2-3 months before eating.
