Recipes - Tomato and Onion Chutney
Ingredients
15ml/1 tbsp mustard seeds
900g/2 lb tomatoes, skinned and
chopped
450g/1 lb onions, chopped
2 cloves garlic, chopped
900g/2 lb cooking apples,
peeled, cored and sliced
225g/8 oz raisins
350g/12 oz granulated sugar
30ml/2 tbsp curry powder
5ml/1 tsp cayenne
20ml/4 tsp salt
900ml/1 1/2 pts vinegar
Method:
Tie the mustard seeds in a
piece of muslin and tie on the handle of a
preserving pan.
Place all the ingredients in
the pan and heat gently until the sugar has
dissolved, stirring, Bring to the boil then simmer
gently for about 3 hours until very thick.
Discard the mustard seeds and
spoon the chutney into airtight jars. Store for 2-3
months before eating.
