Drinks Recipes - Badam Sherbet

Ingredients

  • 150g/5 oz blanched almonds

  • 900g/2 lb sugar

  • 300ml/1/2 pt water

  • 10 cardamom pods

  • few drops of kewra or rose water

  • few drops of almonds essence (extract)


Method:

  1. Soak the almonds overnight in cold water. Drain the almonds then grind them to a fine paste with a little water.

  2. Place in a large pan with the sugar and water, bring to the boil then simmer gently, stirring continuously.

  3. Grind the cardamom pods with 15ml/1 tbsp of water. Strain through muslin (cheesecloth)  into the almonds syrup, stir well and skin any scum off the top.

  4. Simmer until the syrup thickens then remove from the heat and strain through muslin (cheesecloth) or a fine sieve. Leave to cool.

  5. Stir in the kewra or rosewater and the almonds essence. To serve, dilute with iced water and serve with crushed ice.
