Drinks Recipes - Cherry Squash

Ingredients

  • 450g/1 lb cherries

  • 450ml/3/4 pt water

  • 225g/8 oz sugar

  • 7.5ml/1 1/2 tsp citric acid

  • 5ml/1 tsp cherry essence (extract)


Method:

  1. Put the cherries and water in a large pan and bring to the boil.

  2. Reduce the heat and simmer gently for about 15 minutes until tender. Cool then rub through a sieve and collect the juice in a clean pan.

  3. Add the sugar and citric acid, bring to the boil, skim off any scum and simmer for 5 minutes over a medium-low heat.

  4. Leave to cool then stir in the cherry essence. Dilute with cold water to taste.
