Ingredients
Method:

Put the cherries and water in a
large pan and bring to the boil.

Reduce the heat and
simmer gently for about 15 minutes until tender. Cool then rub through a sieve and collect the juice
in a clean pan.

Add the sugar and citric acid, bring
to the boil, skim off any scum and simmer for 5
minutes over a medium-low heat.

Leave to cool then
stir in the cherry essence. Dilute with cold water
to taste.
