Recipes - Lemon Barley Water
Ingredients

50g/2 oz pearl barley
-
50g/2 oz sugar
-
juice of 2 lemon
Method:

Put the barley into a pan, just
cover with cold water and bring to the boil. Strain
off the water and rinse the barley under cold,
running water.

Return the barley to the pan with
600ml/1 pt of water, bring to the boil, cover and
simmer for 1 hour.

Strain the liquid into a jug, add
the sugar and leave to cool. Stir in the lemon juice
and store in the refrigerator.
