Drinks Recipes - Lemon Barley Water

Ingredients

  • 50g/2 oz pearl barley

  • 50g/2 oz sugar

  • juice of 2 lemon


Method:

  1. Put the barley into a pan, just cover with cold water and bring to the boil. Strain off the water and rinse the barley under cold, running water.

  2. Return the barley to the pan with 600ml/1 pt of water, bring to the boil, cover and simmer for 1 hour.

  3. Strain the liquid into a jug, add the sugar and leave to cool. Stir in the lemon juice and store in the refrigerator.
