Cut the tops off the mangoes
and let the oily substance ooze out. Wash well.
Put
the mangoes and water into pan, bring to the boil,
cover and simmer for about 40 minutes until the skin
and seeds have separated from the pulp (or you can
do this in a pressure cooker).
Discard the skin and seeds and
puree the pulp in a blender or food processor. Stir
in the spices, salt, pepper and sugar. Cool then
chill.
To serve, put 3-4 tablespoon of the
concentrate into a glass and top up with ice and
water.
