Drinks Recipes - Payasam

Ingredients

  • 6 ripe mangoes

  • 450ml/3/4 pt coconut milk

  • 100g/4 oz sugar

  • 2.5ml/1/2 tsp ground cardamom

  • pinch of ground saffron

  • 5ml/1 tsp ghee

  • 2-3 cashew nuts

  • ice cubes


Method:

  1. Peel the mangoes, squeeze out and retain the pulp. Add a little hot water to the mango stones and wash them clean of all pulp.

  2. Then add this to the pulp with coconut milk, sugar, cardamom and saffron.

  3. Heat the ghee in a separate pan and fry the cashew nuts for a few minutes.

  4. Add them to the milk mixture and serve cold with ice cubes.
