Sandalwood Drink
Ingredients

1.75l/3 pts water
-
5 cloves
-
5 cardamom pods
-
2.5ml/1/2 tsp saffron strands
-
4 drops of sandalwood essence
(extract)
-
225g/8 oz light soft brown
sugar
-
juice of 1 lemon
-
250ml/8 fl oz natural (plain)
yoghurt
-
1.2l/2 pts tonic or soda water
Method:

Put the water, cloves, cardamom
pods, saffron and sandalwood essence in a pan, bring
to the boil then simmer over a medium heat for 5
minutes.

Stir in the sugar until dissolved, then
boil until the syrup thickens, Remove from the heat,
stir in the lemon juice and leave to cool.

Puree the syrup and yoghurt in
a blender or food processor for 1 minute until it
becomes frothy.

Pour into a bowl, mix with tonic or
soda water and serve cold with ice cubes.
