Ingredients

1.5l/2 1/2 pts water
-
250ml/8 fl oz milk
-
1 cinnamon stick
-
6 cardamom pods
-
6 cloves
-
5mm/1/4 in ginger root, chopped
-
50g/2 oz light soft brown sugar
-
30ml/2 tbsp Darjeeling or Assam
tea
Method:
-
Put the water and milk into a
pan and bring to the boil. Stir in the spices and
sugar and boil for 5 minutes.

Remove from the heat,
cover and pan and leave to infuse for 10 minutes.
Add the tea and bring back to the boil.

Cover and
simmer gently for 5 minutes. Strain and serve
immediately.
