Drinks Recipes - Spiced Tea

Ingredients

  • 1.5l/2 1/2 pts water

  • 250ml/8 fl oz milk

  • 1 cinnamon stick

  • 6 cardamom pods

  • 6 cloves

  • 5mm/1/4 in ginger root, chopped

  • 50g/2 oz light soft brown sugar

  • 30ml/2 tbsp Darjeeling or Assam tea


Method:

  1. Put the water and milk into a pan and bring to the boil. Stir in the spices and sugar and boil for 5 minutes.

  2. Remove from the heat, cover and pan and leave to infuse for 10 minutes. Add the tea and bring back to the boil.

  3. Cover and simmer gently for 5 minutes. Strain and serve immediately.
