Ice Cream Recipes - Kulfi with Cardamom

Ingredients

  • 1.5l/2 1/2 pts milk

  • 25g/2 tbsp sugar

  • 100g/4 oz flaked almonds

  • seeds from 16 cardamom pods, ground

  • 2-3 drops of almonds essence (extract)


Method:

  1. Bring the milk to the boil and simmer until it is reduced by at least half, stirring all the time to prevent burning.

  2. Stir any skin that forms back into the milk. Stir in the sugar until dissolved.

  3. Remove from the heat and add the almonds and cardamom. Stir in the the almonds essence.

  4. Leave to cool then pour into moulds and freeze for about 3 hours until firm.
